Discover one of the Andes’ most authentic culinary traditions with our Pachamanca experience, an ancient cooking technique that dates back to the pre-Inca and Inca civilizations. This ancestral dish is prepared by digging a cooking pit and heating strong river stones capable of holding high temperatures.
Once the stones are ready, a delicious mix of ingredients is placed inside the earth oven—various cuts of meat, Andean tubers, fresh vegetables, and native corn. Everything is covered and slow-cooked over the hot stones for about 30 minutes, creating a unique flavor that represents centuries of Andean culture.
Traditionally, Pachamanca was served during festivities and Andean wedding ceremonies. Today, it is often enjoyed alongside a sacred drink made from purple corn, then we provide a cream, which is mixed with ground chili and aromatic Andean herbs from the Sacred Valley.
